Keep him hungry. No food until they have one bite of new veggie every day.

Re: need advice on veggies!!
once dd starting cooking with us she didn't eat a thing. Nothing. It was like 2 foods and 1 was yogurt. lol
Dh loves to cook so she cooks with him all the time on the weekends. As he cuts, she's willing to try things. We finally got her to eat carrots that way. She won't just eat them anytime but is more willing to try.

DD isn't a fan either. I don' t know, will something bad happen if they don't eat veggies? I don't really eat veggies and I"m alive. I just don't like to force things on her. She is surviving fine and is rarely sick. I think she is ok

There's a cookbook called Deceptively Delicious which has recipes that hide vegetables in them. Great way to get vegetables in without a war. I would still try to get your child to try different vegetables in addition to hiding them cleverly.

DD used to love veggies, then she hit 2 and started to refuse them all (and meats). Once in a while she will eat carrots, and that is about it. I got three Sneaky Chef cookbooks for the holidays and have been using that to try to sneak some veggies in. I also buy those Hidden Veggie pastas, and add pureed carrots to pasta sauce.
I am also going to keep offering the veggies (and meats are our other problem) and maybe one day she will be open to them again! Right now she pretty much just wants to eat the same 5 foods for every meal.

What about smoothies or juicing ? You can disguise the veggie taste if you add fruits.

Re: need advice on veggies!!
DS goes through phases- he loved veggies, then he only ate corn and peas, then he only ate bananas, now he's on a applesauce kick and the only veg he wants is carrots
I usually try to at least present him with fruit/ veggies, but they say it takes 10 tries for a kid to really knows if he likes a new food or not (this is from a training through cornell cooperative extension). So even though I offer him a variety of veggies, if he doesn't eat them i blend fruits and veg into his food too.
I blend a ton if veggies into tomato sauce I shred squash with a food grater and hide it in pasta I blend applesauce with sweet potatoes (it's really good!) For a while he liked veggie burger patties so I stocked up on those
When he was younger, and obsessed with bananas I made a veggie spread that I put on toast- I blended any veggie with bananas (anything blended w bananas still tastes like bananas)
As long as he gets some variety of fruits and veggie nutrients I'm happy
