Mac and Cheese
Ingredients:
1 box of pasta
1 bar of cheddar cheese (I like to use Cracker Barrel cheddar or sharp cheddar) CUBE IT INTO SMALL PIECES
1 cup flour
3 cups milk
1 stick of butter
½ red onion (chopped finely – use mini food processor)
Salt
Pepper

While the water for the pasta is boiling, over medium heat use a large pan and melt butter and add chopped red onion, salt and pepper. Once the red onion is soft (3-5 minutes), add the 3 cups milk and 1 cup floor and whisk continuously until it boils. Once brought to a boil add the cheese cubes to the pan and whisk continuously until it is all melted.

Add the cheese sauce to the drained pasta and place in a baking dish. Bake on 350 for ½ hour. If you like, you can add some breadcrumbs to the top to get those crispy pieces.

I use this recipe most of the time. The only substitution is that I use shredded cheese (1.5 cups of cheddar and 1 cup of Monterey Jack/Colby)

1 1/2 cups uncooked elbow macaroni
2 tablespoons butter
2 tablespoons all-purpose flour
1/4 cup milk (I usually use skim)
1 cup half-and-half
1/4 teaspoon paprika
1/2 teaspoon pepper
2 1/2 cups grated sharp cheese, divided
salt
Preparation:

Preheat oven to 350°. Cook macaroni in boiling salted water according to package directions; drain well and set aside. Meanwhile, melt butter in a medium saucepan over low heat. Blend in flour, stirring constantly, until smooth and bubbly. Gradually stir in milk and half-and-half. Cook, stirring constantly, until mixture boils and thickens, about 2 to 3 minutes. Remove from heat and add paprika, pepper, and 2 cups of the cheese; stir until cheese is melted and sauce is smooth. Combine sauce with the macaroni and add salt to taste. Place in a buttered 1 1/2-quart casserole dish. Garnish top with remaining 1/2 cup of cheese and dot with additional butter. Bake 25 to 30 minutes.
Serves 4 to 6.

Mac and Cheese

Yield: 6 to 8 servings

1 pound elbow macaroni
2 tablespoons butter
2 tablespoons flour
2 cups milk
Salt and pepper, to taste
2 cups plus 1/2 cup shredded sharp Cheddar

Cook the macaroni in boiling water for about 10 minutes until tender but still firm. Drain well and set aside.
In a deep skillet, melt the butter over medium heat. Add the flour to make a roux and cook, stirring, to remove any lumps. Pour in the milk and cook until the mixture is thick and smooth. Season with salt and pepper. Stir in 2 cups Cheddar and continue to cook until melted. Add the cooked macaroni and stir. Transfer the mixture to a 2-quart casserole dish. Bake in a preheated 350-degree F oven for 20 minutes. Remove the casserole from oven, top with remaining 1/2-cup cheese. Bake for an additional 5 minutes until hot and bubbly.

I like to add seasoned breadcrumbs to the top for extra flavor.
