Sun.- Take out

Mon.- Chicken and dumplings

Tues.- Rigatoni with simple bolognese sauce, salad, garlic bread

Wed.- Stuffed peppers with feta cheese

Thurs.- Pot roast (never made last week), buttered egg noodles

Fri.- Shredded buffalo chicken pizza

Sunday: Ravioli with Jessica/Ophelia's Bolognese sauce (WHICH SMELLS HEAVENLY RIGHT NOW!), house salad, garlic bread. (and Raspberry filled Butter Cupcakes for dessert).

Monday: Tuscan chicken, Sauteed Kale and orzo.

Tuesday: Chili, yellow rice, cornbread.

Wednesday: Chicken Pot Pies.

Thursday: Kielbasa, Sauerkraut and onions w/beer, Skillet Potatoes.

Friday: PIZZAAAAAAAAA!

Saturday: Roasted Chicken, Rice, Gravy, Sausage Stuffing, Cranberry Sauce, Whatever Veg looks good at the Farmer's Market.

Sat: Jack's birthday bbq: burgers, hotdogs, chicken, baked tater tots, beans, slaw, and sauteed onions. Followed by birthday cake of course!!

Sun: Garden rotini pasta tossed with butter and parmesan with 2 kinds of pinwheel sausage: rosemary & garlic and mushroom, pepper & onion....so good

Mon: Soup & sandwich or grilled cheese

Tues: Taco night with all the fixins: yellow rice, black beans, salsa etc

Wed: Shrimp Francese over spaghetti and tossed salad

Thurs: Rotisserie Chicken, pilaf, mixed steamed veggies, and cranberry

Fri: chef's night off/leftovers

TUES - creamy country chicken & veggies, biscuits

WED - smothered pork chops, potato pancakes, roasted carrots (never made last week)

THUR - rodeo burgers, onion Rings, Salad

FRI - Grilled Cheese & Tomato Soup!

SAT - Friends for dinner

Sun: My mom made chicken soup

Monday: Tilapia tacos with corn and black bean succotash

Tues: Turkey chili with brown rice, cheddar cheese, chips etc. and salad

Wed: Beef Stew in the slow cooker, biscuits, salad

Thurs: Roasted chicken pieces, roasted acorn squash glazed with maple syrup, green beans

Friday: Baked ziti-ish casserole - using turkey sausage, ricotta etc, salad

so funny, I was just coming on to ask this question...I want to try my slow cooker for the first time with beef stew this week. how do you tweak your stove top recipe for the slow cooker? more liquid? less liquid? any tips would be awesome

Sun: eggplant parm, linguine with mussels fra diavolo (left over from sat night dinner) sauteed swiss chard, baguette

Mon: garlic chicken, rice, black beans, corn, salad

Tues: chili, roasted sweet dumpling squash, corn bread

Wed: roasted zucchini pasta, sliced heirloom tomato salad

Thurs: beef stew with carrots, potatoes, swiss chard, warmed multi grain bread

Fri: (my MIL bday) whole roasted chicken with lemon and thyme, crispy rosemary garlic potatoes, sauteed broccoli rabe

Mon- sandwiches...it was a long weekend Chat Icon

Tues- chicken and proscuitto tortellini in a light vodka sauce

Wed- steak, baked potato, creamed spinach (no steak for me, prob veggie burger)

Thurs- fish TBD, steamed veggies, brown rice

Fri- maybe sushi or homemade pizza depending on my mood

YES! The nutmeg really added that right bite to it. I was a little hesitant.. but man was it the right call! I used Evap milk instead of regular milk because i don't usually have whole milk. I could not find fresh oregano though.. I used just a pinch of dried instead. I also added a little nob of butter to gloss the finish. I also hit it with some red pepper flakes because I like the bite. I also tossed in about a 1/3rd cup of chianti.. just because it seemed to want it.Chat Icon

Sorry, I just saw this Chat Icon I used about 2 lbs of meat and about 32 oz of liquid (plus carrots, potatoes, mushrooms) - i just kind of eyeball it. Also I like me stew to be on the thick side and not too soupy.

It's also called Brick Chicken, but since I use my cast iron dutch oven as weight (as opposed to a brick)...

Take 3 1/2 chickens ( 1 1/2 chickens - it's all that will fit in my pan) Make sure to remove the back bone. Salt and pepper. Make sure skin is dry.
Heat a cast iron pan, add about a tablespoon of olive oil and a tablespoon of butter. Put the chicken 1/2s skin side down on the pan. Weight them down. You can use bricks wrapped in foil. I take my creuset dutch oven, put foil on the bottom and fill with water. I also stick some herbs in and around the chicken. Tonight I used thyme. Let it cook for about 20-25 mins. Turn the pan if you want to make sure you avoid hot spots. But DON'T TOUCH THE CHICKEN.

Get tongs and carefully turn the chicken over. You don't want to rip that precious skin. Let it cook, skin side up, no bricks for like another 10 mins. Once the chicken is out, get some of the grease out, add some water to deglaze and then some lemon juice for a nice pan gravy. I pour the gravy UNDER the chicken on a serving platter.

Sunday- Meatsauce over whole wheat pasta.
Monday-Terayakki chicken, brown rice, carrots.
Tuesday-Turkey meatball hero's w/ melted mozzarella .
Wednesday- salad,marinated skirt steak, sweet potatoes.
Thursday- Take out
Friday- meatloaf,mashed potatoes, and a veggie.
Saturday- Roasted Chicken,steamed broccolli, sweet potatoes.
