Menu thread 9-17
Really trying to plan and stick to it!
Tonight- pizza & salad
Sun.- Pasta with broccoli, asparagus, garlic, oil and romano cheese
Mon.- Homemade chicken pot pie
Tues.- Pot roast in my Le Creuset over buttered egg noodles or mashed potatoes. Awesome recipe from Cook's Illustrated with red wine and veggies)
Wed.- Baked ziti with meat sauce
Thurs.- Chicken stuffed with spinach and feta with rice
Fri.- take out

Sat: We are out and about all day today so if we don't eat dinner at the fair, we'll just come home and have hotdogs, sweet potato fries, and broccoli slaw eta: We ended up eating at the fair
Sun: Jack's Birthday. Again, we are out and about all day so we're just doing pizza and ice cream cake with the immediate family since he already had his big party. eta: we ended up adding a half tray of Penne ala vodka with grilled chicken and Cesar salad to our order and have a ton of food left now LOL
Mon: Oven Roasted Rosemary Thyme Chicken, Baked Sweet Potatoes, Roasted Brussel Sprouts ala rojerono
Tues: Ophelia/Hayley's Empanadas with Tex-Mex Salad (with cucumber, corn, black beans, avocado, and tortilla strips and lime basil dressing)
Wed: Soup and Grilled Cheese. Italian wedding soup for DH and Cashew, Carrot, Ginger or Butternut Squash Soup for me and the boys
Thurs: leftovers from Mon & Tues
Fri: Leftover Pizza / Penne

Saturday - fakesgiving we're having turkey breast (rolled around stuffing), green bean casserole (aka "guck") and baked macaroni
Sunday - teriyaki chicken thighs, steamed white rice, stir fry veggies
Monday - fakesgiving leftovers for me & lo; "special salad" for steve [romaine, cucumber, tomato, soppressata, provolone, bocconcini with oil and vinegar]
Tuesday - southwestern beef chili with cornbread
Wednesday - roasted chicken drumsticks with parmesan potatoes
Thursday - cheesy baked tortellini with garlic bread and sliced cucumber
Friday - homemade pepperoni pizza with some kind of light salad

Sunday - lasagna with mini meatballs, mesclun salad
Monday - whole wheat grilled pizza with prosciutto, arugula and balsamic glaze (never made last week)
Tuesday - homemade chicken pot pie
Wednesday - leftovers
Thursday - crispy gnocchi with pesto, broccolini with lemon zest
Friday - tilapia with almond brown butter, sauteed swiss chard
Saturday - out

Saturday - DH & I went to the Ground Round, but I got a major migraine, so I just ate a few bites of appetizers.
Sunday - Wedding at Koenig's!
Monday - Spicy ketchup & onion turkey meatloaf, side of butternut squash
Tuesday - Emeril's chicken, bacon w/ turkey bacon as a substitute, & white bean soup
Wednesday - Flounder with crab stuffing over whole wheat linguini
Thursday - T - bone steaks marinated in Merlot sauce, side of mashed potatoes
Friday - Out with the girls...not sure where yet though

1 cup potato, diced 1 cup onion, diced 1 cup celery, diced (sometimes I skip this and just add some celery seeds) 1 cup carrot, diced 1/3 cup melted butter 1/2 cup all-purpose flour 2 cups chicken broth 1 cup half-and-half or whole milk 1 teaspoon salt 1/4 teaspoon pepper 4 cups chicken, cooked and chopped (I use rotisserie chicken) 1 handful of frozen peas 2 pie crusts (I use the refrigerated pillsbury pie crust) Few shakes of poultry seasoning(I don't measure- just taste)
Directions:
1Preheat oven to 400°F. 2Saute onion, celery, carrots and potatoes in butter for 10 minutes- until slightly soft 3Add flour to sauteed mixture, stirring well, cook one minute stirring constantly. 4Combine broth and half and half. 5Gradually stir into vegetable mixture. 6Cook over medium heat stirring constantly until thickened and bubbly. 7Stir in salt and pepper, seasoning; add chicken and peas and stir well. 8Pre bake one pie shell for a few minutes so it doesn't get too soggy 9Pour filling in and top with second pie shell 10Cut slits to allow steam to escape. 11Bake for 40-50 minutes or until pastry is golden brown and filling is bubbly and cooked through.

I'm so late with menu planning. My fridge is so small that I need to go shopping about every other day. Welcome to Europe!
Sunday- Roasted Czech Duck, Red Cabbage, with Czech dumplings (Knedliky, amazing bread dumpling recipe!)
Monday- Greek Turkey Meatballs with Yogurt and Broccoli
Tuesday- Shrimp Parm heroes, lightened up from Skinny Taste)
Wednesday- Spinach Stracciatella Soup with whole wheat Farfelle
Thursday- Pork chops with Dijon Herb Sauce
Friday- maybe out to dinner. If not maybe steak.
Saturday- Goulash with Knedliky (if crock pot arrives!)
Sunday- Pioneer Woman's Roast Chicken with a side of carrots
