Mon.- Homemade chicken pot pie

Would you mind sharing your chicken pot pie recipe? Chat Icon

Here it is:

1 cup potato, diced
1 cup onion, diced
1 cup celery, diced (sometimes I skip this and just add some celery seeds)
1 cup carrot, diced
1/3 cup melted butter
1/2 cup all-purpose flour
2 cups chicken broth
1 cup half-and-half or whole milk
1 teaspoon salt
1/4 teaspoon pepper
4 cups chicken, cooked and chopped (I use rotisserie chicken)
1 handful of frozen peas
2 pie crusts (I use the refrigerated pillsbury pie crust)
Few shakes of poultry seasoning(I don't measure- just taste)

Directions:

1Preheat oven to 400°F.
2Saute onion, celery, carrots and potatoes in butter for 10 minutes- until slightly soft
3Add flour to sauteed mixture, stirring well, cook one minute stirring constantly.
4Combine broth and half and half.
5Gradually stir into vegetable mixture.
6Cook over medium heat stirring constantly until thickened and bubbly.
7Stir in salt and pepper, seasoning; add chicken and peas and stir well.
8Pre bake one pie shell for a few minutes so it doesn't get too soggy
9Pour filling in and top with second pie shell
10Cut slits to allow steam to escape.
11Bake for 40-50 minutes or until pastry is golden brown and filling is bubbly and cooked through.
