i usually fry then put in sauce, but I just made the grandma maroni ones which u only bake and they were soooooo moist

I bake them in the oven until browned on the outside but pink in the middle. 7 minutes on one side then I flip them over for another 7 minutes. I then take them out and put them all in the sauce for a minute or two at the end.

This is how I do it as well..maybe not 7 mins ..but maybe 10ish..

I grew up with them fried and then finished in sauce.. but I prefer them baked. I don't really even LIKE sauce on them - but I do add a few to the sauce to give the sauce some flavor.

Fried usually unless company is coming over and then I make a bigger batch which I fry first then add them to the big pot of sauce.

I fry in oil first (half deep) and cook them in wine to make Spanish Albondigas, which I guess is like cooking them in sauce?

I used to brown in a skillet but it takes too long....so now I put a sheet pan in the oven first to get in nice and hot, then when I put the balls on it sears it on one side, giving some of the browned taste that I love.
best of both worlds!!!!!
