meals for after delivery

Is anyone planning on cooking some meals and freezing them for when you come home with dc? What kind of things will you be making? The only thing I can think of so far is Lasagna

Re: meals for after delivery

that is in the plan but knowing how busy I get I wont have time to do it. A good meal to make and freeze is eggplant parm. Also MIL makes sauce and freezes it with meatballs and they defrost nicely.

I just got this cookbook-Don't Panic Dinner's in the Freezer.

So far before I bought the cookbook I have frozen homemade chicken soup, chili, swedish meatballs, mac &chz and couple of those stir fry meals from trader joe's.

so far I've made meat sauce to throw over some pasta, also planning a lasagna, eggplant parm but could definitely use some other suggestions too!

Re: meals for after delivery

Before DS I made about 4 meals and froze them. They were great for when I didn't want to cook dinner that night.

Stews keep really well and are super easy to make on the stove or in a crock pot

You have to admit- a hot fresh slice of pizza tastes WAY better than some defrosted chicken dish or stew you just heated up! Chat Icon

I did the same with DD#1 and plan to do it again this time around. I made Chicken Noodle Soup, Lasagna, Chili, Ropa Vieja a few chicken cutlets and extra meat sauce.

I went to a place called Let's Eat! where they have all of the fresh ingredients out and prepared and you put it all together in containers/baggies according to the recipe and cook it at a later date. I was told that I could freeze the uncooked ingredients and thaw overnight when I was ready to cook. We did this with DS #1 and it was great, delicious, and easy.

We do the same sort of thing only the place near us is called Let's Dish. I know that they have a bunch of places on LI like it, but I can't recall the name off the top of my head. It's so convenient because we have a freezer full of healthy meals that are easy to make. I'll likely be taking full advantage of the delivery service once I get closer to my DD.
