Let's talk rice??
I try to stay away from processed foods but I always seem to make Uncle Ben's Broccoli Au Gratin rice. I would like to start making my own rice recipes, could you please share yours?

pilaf or things similar to what you get in a box but homemade. I make fried rice but I am looking for something different.

2 cups of basmatti rice 1 teaspoon of salt 1/4 cup butter plus 3 tblspn
Directions:
Wash the rice well Keep washing the rice, until the water runs clear. Drain the rice well.
Bring 2 quarts of water to boil with the salt added. Add the rice now and bring back to boiling. Boil the rice for approximately 5 minutes. Remove from the stove and drain the rice from the water. -- The gas must be on low from this point onwards. Use on non-stick pans for this.--
Heat another pan the butter in a small pan with 1/4 cup of water. Let the mixture get bubbly and coat the whole pan with this mixture. Add the rice into the pan and add the 3 tblspn of butter on top of the rice. Cover the pan and let it cook for about 30 mins. When the rice is done, there will be a buttery crust (hopefully not ) Place the rice it on serving tray and let the rice cool or else the rice will overcook.
-- you can top this with rotisserie chicken, kabobs, falafel, curry..
or even if you want to get adventerous, garnish some sauteed onions and nuts.
add some cinnamon, or nutmeg or bayleaf..

I make a rice pilaf that my hubs and kids love.
I put a olive oil in my pot and add about 3/4 cup of chopped onion. Saute for a minute and then add about 2 Tbsp of butter and a handful of orzo. Cook on medium-low until the orzo gets a little golden and then add 2 cups of chicken broth and a heaping tablespoon of chicken base (it's like a wet boullon paste you can find near boullon in the supermarket or Costco. When the liquid boils throw in 1 cup of uncooked rice and bring back to a boil (stirring) - when it boils again, reduce heat to low and cover for 20 minutes. Remove top after 20 minutes and stir in a half cup of frozen peas and a handful of grated carrot. Stir and cover for 5 minutes or until peas are cooked through.

I use a mix of brown, wild and red rice.
-1 cup uncooked rice -1 small onion chopped -1 package of sliced white mushrooms -2 tablespoons olive oil -2 tablespoons butter -1/2 cup of red wine -1 1/2 cups beef stock (not broth) -Fresh cracked black pepper -Chopped fresh thyme
In sauce pan over medium heat add olive oil and 1 tablespoon of the butter. Add onion and mushrooms and saute until onions are translucent, do not brown. Add rice, stir it up a bit to coat. Add wine, beef stock, the other tablespoon of butter, thyme (I've done it without and it is just as good) and pepper. Cover and cook on low about 40-45 mins. It is so flavorful and rich.
