Any packing advice given it's January? Other tips? Dinner reservations, fast pass, and itinerary is all done. Anything else?

As for packing, I've been watching the weather, definitely pack long pants and sweatshirts along with standard Florida wear. When I check in on Tuesday it will only be in the 40s but when we went this week a few years ago we wore tank tops and shorts half the trip and jeans and hoodies the rest of the time. Get ponchos at the dollar store and keep them in your "park bag" this way after it rains you can throw them out and not worry about the cost. You also won't have to pay Disney prices for rain gear. Bring extra pairs of socks.
While waiting out the next few days will be rough I suggest the following: Sing Disney songs all day and watch Disney movies every night! ;)

Thanks Kerri! What else should we put in our "park bag"? And do they have lockers that I can put extra stuff (sweatshirt, ponchos, princess dress, etc) in so I don't have to carry it around?

Yes! They have lockers.
My Park Bag: Sunscreen Water Bottle Camera/phone Travel Charger/extra batteries (i take TONS of photos and I blog and tweet and update fb from the parks so I go through battery time fast) Ponchos Autograph Book/pen penny book with quarters and pennies separated in an M&M minis container. snacks, something light, cheeries or granola bar etc. SOCKS. Dry socks can completely change your mood. Whether feet get wet from rain, puddles or splash areas, dry socks can change your life and prevent blisters. bandaids (there is first aid at every park, but a quick bandaid can help save the trip)
