I would normally recommend couples swept away in negril but its kinda far from the airport, maybe 1.5 hours so that might be out for just a weekend. Closer to the airport iberostar grand rose hall is supposed to be amazing. I haven't been there but I've read really good things. We're booked to go in november.

Re: Jamaica
Couples Negril - (not Swept Away - there are two Couples' resorts in Negril). We LOVED it. But it's not on 7 mile beach....which has its positives and negatives. The positives (for me) are that the water there is EXTREMELY calm. No waves. You drag your foam chair mat into the water and float for hours. It's much more quiet and secluded than Swept Away. But the negatives are that youre not in 'the action.' All the restaurants and shops are on 7 mile. It's a cheap, quick cab ride, but annoying.
I personally like Negril much better than Montego Bay (much nicer beach, I think)...
Next time, DH and I want to stay at Catch a Falling Star in Negril. Boutique little hotel on the cliffs in Negril. We LOVED visiting (we had dinner there - yum). Super romantic and TOTALLY unlike anything in the area.
Jamaica seems to have a love it/hate it vibe with people...but my DH and I LOVE it. I'd go back in a heartbeat.
