How long do you cook..
Filet Mignon for in a grill pan? I posted this here because it gets more traffic and I need a quick answer..

I would say about 6 or 7 minutes per side, depends on the thickness. After you flip it, you can tell how much its cooked by pressing on it with your finger, the firmer the meat the more cooked it is. The more it gives, the less cooked. If you want it medium, you want it to give a little. Does that make sense?

I took a class at the institute of Culinary Education (ICE) last year and they taught us the face test.
Using both index fingers: *Use an index finger and gently push on your chin, use other index finger to press on the meat. If the firmness is similar (somewhat soft and squishy with bounce), the steak is rare to medium-rare.
* Use an index finger and gently push on your nose, use other index finger to press on the meat. If the firmness is similar (still soft, but somewhat more firmer), the steak is medium.
* Use an index finger and gently push on your forhead, use other index finger to press on the meat. If the firmness is similar (firm, not very squishy), the steak is well done.
It sounds silly but it really works.
There is another method where you ball your hand up into a fist and you feel the skin between your thumb and index finger. Soft grip = rare, medium fist = medium, tight fist = well done.
