Help me create... *EDITED
a cooking/baking bucket list!
I thought of this over the weekend when I made my FIRST EVER whole roasted chicken and my FIRST EVER cheesecake! I want to make a list of all of the things I'd like to cook/bake (from scratch of course)... but I'm totally blanking out! (in totally random order).
They don't have to be things that are hard... just things that I've never done before (completely from scratch!) I'd like to have 100 things!

Fresh Berry Crepes
2 cups flour 2 tablespoons sugar 2 teaspoon salt 6 eggs 6 tablespoons butter, melted and cooled 2 cups milk 2/3 cup water For Filling 1/2 pound each fresh blueberries, blackberries, raspberries, and strawberries 1 cup raspberry coulis 2 cups whipped cream 1/4 cup powdered sugar
In a food processor set with a metal blade, place the flour, sugar, and salt. Add the eggs and process with pulsing action. Add the butter, milk, and water. Pulse to combine. Pour batter into container and refrigerate for 1 hour. Spray frying pan or crepe pan with non-stick spray. Heat pan. When hot, ladle enough batter to thinly coat the surface of the pan. Cook on 1 side and flip. Cook on the other side. Remove from pan and let cool. Continue making the crepes, spraying pan prior to making each one. Fill each crepe will mixed berries and a little raspberry coulis. Top each crepe with more berries, coulis, whipped cream, and finish with a dusting of powdered sugar.

EGGPLANT 2 large eggplants (about 2 3/4 pounds), unpeeled and cut lengthwise into 1/2-inch slices 1/2 cup extra-virgin olive oil Kosher salt and freshly ground black pepper
MEAT SAUCE 2 tablespoons extra-virgin olive oil 1/2 medium yellow onion, chopped 3 cloves garlic, minced 1 pound ground beef 1/2 teaspoon dried oregano 1/8 teaspoon ground allspice Pinch of ground cloves 1 cinnamon stick, broken in half 1/2 teaspoon kosher salt, plus to taste Freshly ground pepper 1 1/2 cups whole, peeled, canned tomatoes (with puree), roughly chopped 1 bay leaf
CUSTARD SAUCE 5 tablespoons unsalted butter 6 tablespoons all-purpose flour 3 cups whole milk, room temperature 1 1/2 teaspoons kosher salt Pinch of ground nutmeg 1 large egg 2 large egg yolks 1/2 cup dried breadcrumbs 3 tablespoons Pecorino Romano (I used freshly grated Parmesan)
Bake the eggplant: Preheat the oven to 475 degrees F. Brush the eggplant slices on both sides with the oil and lay on 2 small or 1 large foil-lined baking sheet. Season with salt and pepper. Cover with foil and bake until the eggplant is soft, about 25 minutes. Set aside covered.
Make the meat sauce. Heat the olive oil in a large skillet over medium-high heat. Add the onion and cook, stirring with a wooden spoon, until lightly browned, about 4 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 1 minute. Add the beef, oregano, allspice, cloves, and cinnamon. Break the meat up into small pieces and season with the 1/2 teaspoon salt and pepper to taste. Cook, stirring occasionally, for about 2 minutes. Lower the heat to medium and cook, stirring, until just cooked but still slightly pink inside, about 1 minute more. Add the tomato and bay leaf and bring to a simmer. Cover, and cook until the sauce is thickened and fragrant, about 20 minutes.
Make the custard sauce. Melt the butter in a medium saucepan over medium heat. Whisk in the flour until smooth. Cook, stirring, for 1 minute. Remove the pan from the heat and add the milk, salt, and nutmeg. Return to the heat and while whisking constantly, bring to a boil. Simmer 2 minutes. Transfer the sauce to a bowl and stir to cool. When the sauce is cool, whisk in the egg and yolks.
Assemble the moussaka. Lower the oven to 350 degrees F. Brush a 9 x 13 x 2-inch casserole dish with the oil. Scatter the breadcrumbs over the bottom of the pan. Lay half of the eggplant in the pan, overlapping the slices if needed. Cover with half of the meat sauce and smooth with a rubber spatula.
Repeat with the remaining eggplant and meat sauce. Pour the custard sauce over the layered mixture and smooth with a rubber spatula. Sprinkle with the Pecorino Romano and bake, uncovered, until lightly browned and the custard is set, about 1 hour.
Remove the moussaka from the oven and let rest for 10 minutes. Use a slotted spoon or spatula to serve.

I have baklavah on there already...
Is crown rib roast beef or pork? I'm not a regular pork-eater! Same for lamb..
I've made rainbow cookies already!
And I'm not a duck or whole-fish eater! Although I do like fish... just NOT with scales!

I think you should definitely try the whole fish.. I have them scale it and remove the guts and gills before they give it to me. It's so easy and tasty to prepare.. you can stuff the cavity with some citrus slices, salt pepper and some herbs (rosemary is nice.. tarragon too) and grill it up. The presentation is really lovely and it looks like so much effort went in. PLUS.. it's WAY CHEAPER to get the whole fish than the fillets.

Yes! But.. you can do what Rob did for the boys (I think last year) - he cut out a paper x and stuck it over the one eye that was up so it looked like a dead cartoon fish. You could always do a heart if you are feeling romantical.

a cornish game hen is not the same thing as a roasting chicken. They are smaller and a little tougher but great to make. I like making them with crushed orange spice along with my regular chicken spices.

I made a whole fish only once. I could not get over the eyes either. I don't like my food looking at me.

I think it can be either beef, pork or lamb. I made the rack of lamb twice now. I did not put the paper hats on it, but it came out very nicely. I used the recipe from the better homes and gardens cookbook and I made the apricot rub it also called for. Extremely yummy.

Cranberry sauce is easy - use the recipe from the back of the Ocean Spray Cranberry bag. Done in 10 minutes ! Substitute some juice for the water for even more flavor, add some orange zest for some orange flavor.
Cream Puffs - my specialty
One stick unsalted butter One cup water One cup Flour Pinch salt
4 large eggs 1 teaspoon vanilla
In a saucepan, combine butter and water, bring to a low simmer until butter is melted. Stir in flour and mix until batter pulls cleanly away from the sides of the pan, about 2 minutes.
Place batter into a mixing bowl and let cool slightly. Add vanilla extract. Add eggs, one at a time, beating well in between.
Drop by spoonfuls onto a baking sheet lined with parchment (baking) paper. Bake in preheated 400 degree oven for 30-35 minutes until golden brown. Do not open oven door while baking. Remove to wire racks and cut each puff in half to let steam escape. Fill with whipped cream and/or pudding, or with ice cream. Sprinkle with confectioner's sugar or drizzle with melted chocolate.

my asian in-laws cook chicken and fish this way. they have to serve the eyes and the tails of the fish and chicken so that you know you are getting the whole chicken and whole fish. if you don't tell me about it, have the time i forget it has the stuff still there.
