Good veggie sides....
Please name some of your favorite veggie sides. I need more veggies in my life.
Tonight I chopped up yellow squash, zucchini, tomato, garlic and mango and am sauteeing it in oil with some s&p.
Looking for some fresh ideas....

not sure if you are a cauliflower fan....but if not, you can substitute broccoli and it's still yummy:
Roasted Cauliflower w/Sun Dried Tomatoes
-Chop up Cauliflower, sundried tomatoes, fresh garlic, and toss with lemon juice (to taste) and drizzle with olive oil. I also add some favorite spices and salt & pepper.
Roast at 400 degrees for 20 minutes.

lately i've been letting veggies soak in italian dressing and then tossing the veggies and dressing in a saute pan and let it simmer for 15-20 minutes until they're tender.
DH asks me to make this all the time and he's never been one to ask for veggies.
ETA: i also cut up brocolli, cauliflower or yams and put them in a baking sheet. i drizzle olive oil over it, salt and pepper and cook for 20 mins. yummy!

Sweet potato fries with salt and basil.
Cut sweet potatos and put on a baking sheet. toss with olive oil. Bake in 400 degree oven for about 25 minutes. When done, toss with kosher salt and fresh chopped basil.

www.dashingdish.com She has a good recipe on there...I tweak it a little bit to suit my needs but you could use this for a general idea!

slice eggplant very thin, sprinkle salt, pepper, evoo, rub mushed garlic generously and pan fry ever so lightly.. its really yummy..

this is one of my favorites too. i haven't tried it with the basil though - just a little oil and salt and put in the oven.

I cut up and fry 3-4 pieces of bacon, add thinly sliced onions, green beans and some chicken broth...the slower and longer, the better...but you can turn up the heat and do it in less time.
My staple is usually carrots, onions and spinach sauteed.

I really like making roasted carrots with garlic. I also like making roasted cauliflower with parmesan.

i like candied carrots... frozen sliced carrots or fresh baby carrots, microwaved with some butter, brown sugar and honey. sooo good!
I also like string beans stirfryed with some evoo, garlic and lemon juice. this is also good with asparagus and broccoli.
sweet potatoes- plain and baked, they taste so good on their own.. sometimes i smash it...
i love acorn squash baked with butter and brown sugar in the middle
i like salads of lettuce, cucumbers, sweet peppers, cabbage, and olives.
