Goat cheese
I became a HUGE fan of it on my honeymoon. Seriously ate it every possible chance I got.
I found a nice long log of it at Trader Joes yesterday and I can't wait to have some. I'm making a salad with it tonight.
Any other suggestions?

I am obsessed with goat cheese too!
Make a grilled goat cheese sandwich (delish with tomato soup)
Put it on pizza with other toppings, like fresh or sundried tomatoes
Wrap it in some phyllo dough with raspberry jam
ETA: I forgot my favorite one, which is a Giada DeLaurentiis recipe...Filet Mignon topped with goat cheese and balsamic syrup. Yum!

i love it too. it's always in my salads. Sometimes i will do a grilled cheese with it. i even like to spread it in crackers or an apple.

Roast some beets, crumble goat cheese over. Grind up some sunflower seeds in a processor with a bit of evoo. Sprinkle that over and use a vinagrette. Mmmmmm. You can also use it on a sandwich

I was a rat in my former life..
I love cheese! Apart from salads, I like to also cook with it.
I take chicken cutlets (after breading and frying/baking them or you can grill them beforehand) and I add a layer of goat cheese and then lay another cutlet over it. I then place them in a baking dish that's got some ala vodka sauce on the bottom and bake them in the oven. Sometimes I sprinkle some on top or I like to make a goat cheese sauce.
just use goat cheese, garlic, olive oil, a little white wine, salt/pepper and chicken broth. whisk it until it's nice and creamy. You can pour this over anything. Chicken, steak, shrimp, pasta, fish, vegetables etc.

I love it in salad!!! with pears and walnuts. heaven!

pasta with goat cheese, chicken sausage & asparagus
on crostini with prosciutto and fig jam
coated with panko and pan fried... served over salad
stuffed in chicken breast along with sundried tomato and spinach
in mashed potatoes with some sliced scallion
on grilled steak sandwiches with arugula
on a balsamic burger
baked in marinara sauce to eat on crusty french baguette
with chicken & spinach in quesadillas
