Take a little bit of olive oil, a little garlic powder, put in pan, add bagged spinach, and some lemon juice on top of spinach, let cook till it wilts all the way down. YUMMY!

Get chicken breasts, pounded thin, some thawed frozen spincach and ricotta cheese.
Lay the spinach and cheese on top of the chicken. ROll the chicken and place in a baking pan, edges down.
Bake at 350 for 20-30 min, until the chicken is done. SOooo good! (also works well with mozzerella cheese too)

I love to make orzo, spinach, lemon juice, olive oil and feta cheese. Yummm!!! I use frozen spinach since I always have that in my house but you can probably use fresh.

tonight I made it as a part of our chicken.
I cooked chicken with lemon, ckn broth, greek rub...
layered the bottom of the dish with spinach, then layered the top of the chicken with more spinach and feta!
For throwing it all together it was DELICIOUS! & a good way to add in spinach.
you can make creamed spinach, I have a recipe that someone posted a long time ago on this board that I have saved. LMK if you want it.

SPinach with onion, cherry tomatoes, feta.
sautee onion &garlic in a little oil, add spinach, then when it is wilted add tomatoes and feta.

I made a spinach and turkey pie yesterday...actually came out pretty good.. Just thawed out some puff pastry, and laid it in a pie plate. Made a mixture of chopped cooked turkey cutlets, spinach, 1/2 an onion diced, 1 diced garlic clove, mozzarella cheese, 2 eggs beaten and salt and pepper and spooned that filling into the pie plate. Baked at about 375 for about 45 minutes.

I generally just throw it all together. Make sure to wash the lemon and use some of the rind (just he yellow part, not the white!) in there as well. That is where the "real" lemon flavor comes from, the lemon oils! I just eye ball all the ingredients

I do this but with fresh garlic.
I also chiffonade it and put it in pasta salad (like basil)
saute it with garlic and oil, hit it off with a ton of parma cheese and serve with pasta.
omelet with feta
throw it into tortellini soup
stuff chicken breasts with it
stuffed shells with ricotta and spinach
the list is endless.

You could make a vegetable lasagna and put the spinach in, or you can make a reg lasagna and mix the spinach in the ricotta mixture then layer as usual.
I like sauteed in EVOO, fresh minced garlic and some red pepper flakes, top with some good parm chees at the end

fyi- i looked up this recipe because i dont remember offhand how to make it- i only use 1 "brick" of frozen spinach when i make it for 2. and i dont use lemon, either- this might look a little complicated but its the easiest thing to make and its Sooo good
Prep Time: 10 minutes
Cook Time: 35 minutes
Total Time: 45 minutes
Ingredients:
2 pounds of fresh spinach or 4 10-oz packages of frozen chopped spinach, thawed 1/2 cup of olive oil 1 large onion, minced 5 stems of fresh dill, coarsely chopped (1 teaspoon dried) or 2 sprigs of fresh mint 2 tablespoons of tomato paste 1 cup of uncooked converted rice 2 1/2 cups of water sea salt freshly ground pepper 1 lemon, cut in wedges Preparation:
Preheat a heavy-bottomed pot on low heat.
If using fresh spinach, wash well, chop, and set aside to drain. If using frozen spinach that has thawed, remove from package, and gently squeeze out excess liquid.
When the pot is preheated, add the olive oil, increase the heat to medium, and sauté the onions until translucent. Add the dill (or mint) and spinach and sauté about 5 minutes until wilted. Dilute the tomato paste in the water and add to the pot with salt and pepper to taste. Increase heat and bring the mixture to a boil, add the rice, stir, and cover. Reduce heat and allow to simmer for 20 minutes or until the water has been absorbed. Do not stir during simmering.
Serve with lemon wedges.

I sautee some sausage, garlic, onions in a pain, and wilt spinach after it's all cooked (i add chicken broth to wilt it), and serve over angel hair and fresh grated parm cheese. its delish.
