I am making a recipe this evening that calls for grated fresh ginger. I ahve the ginger. Do I just peel it before grating it? Is it easy to peel? I usually use ground ginger from the spice rack, but the recipe caklled for fresh so I figured I'd give it a try.

yes, peel it and then grate it....it's not the easiest thing to cut/grate but the taste is so yummy!

and then freeze it for future use... since you probably will have a nice hunk of it left!

I peeled a chunck and keep it in the freezer and grate as needed.
