"Finger Foods" recipe thread

I thought it would be a good idea to start a thread with finger food recipes and ideas for us moms. As DS is making the transition from baby food to table food now that he is finally getting some teeth (at 10 months) I wasnt sure what to give him...some things he isn't able to chew (or actually mush with his gums yet) but I still wanted to make sure to give him a variety and I wanted to make sure he was still eating fruits and vegetables. I found a bunch of recipes online, some I have tried, some I plan on trying soon and wanted to share them. I thought it would be helpful for the clueless like me.

If any of you have any recipes that you would like to share that your DC liked that would be great?



Applesauce Muffins (age 10 months+)
2oz softened butter
2oz sugar
1 egg (if your baby is under 1 year, you may prefer to use these egg substitutes)
3oz applesauce
4oz flour
2tsp baking powder
pinch cinnamon

Preheat the oven to 200 deg C, 390 deg F.
Cream the butter and sugar in a bowl until light.
Beat in the egg until fluffy.
Beat in the applesauce.
Stir the dry ingredients together and add them to the bowl, blending just enough to moisten the dry ingredients.
Spoon into greased muffin tins and bake for around 15 mins, until golden.



Cheesy Vegetable Nuggets (age 7/8 months+)
8oz frozen broccoli florets
4oz breadcrumbs
6oz Cheddar, grated
2 1/2 tbsp water
2 1/2 tbsp olive oil
1 1/2 tsp baking powder

Heat the oven to 375 deg F, 190 deg C.
Cook the broccoli, then drain and chop well.
Combine with the remaining ingredients and mix well.
Form the mixture into nugget shapes and place on a greased baking tray, about 3in apart.
Bake for 20-25 mins, turning halfway through the cooking time.
Serve warm.



Baby Chicken Fingers With Apple (age 7/8 months+)
9oz ground chicken
1 medium carrot
1 medium apple
1/2 garlic clove
1oz onion
1 small egg yolk, beaten
1oz fresh breadcrumbs
pinch crushed, dried thyme
pinch freshly ground black pepper

Peel and grate the carrot, apple, garlic and onion.
Place into a mixing bowl, along with the ground chicken.
Add the beaten egg, breadcrumbs, thyme and black pepper. Mix well.
Take small balls of the mixture and roll into little "sausages".
Place on a grill pan (broiler) and heat under the grill for 10 mins on each side.
Allow to cool.
Serve, or store some in the freezer for future use (if you haven't already eaten them!)


Tropical Treat (6 months+)
1/2 avocado, diced
1/2 small banana, sliced
1/2 papaya, peeled and diced
1/2 kiwi, peeled and sliced
2oz (1/4 cup) unflavoured natural yogurt
drop of pure Maple Syrup (optional)
Combine all the fruits in a bowl. (If this recipe is to be used for a young baby, you can puree the fruit at this stage).
Top the fruit with the yogurt (you can stir in a little Maple Syrup if you wish) and serve.



[Banana and Kiwi With Creamy Fruit Dressing (6 months+)
1/2 ripe banana, sliced
1/2 ripe kiwi, sliced
1/2 avocado, diced
1oz (1/8 cup) cream cheese
pineapple juice
Arrange the sliced banana and kiwi in a bowl (or puree together for younger babies).
Combine the avocado and cream cheese, then add enough pineapple juice to achieve a spoonable consistency.
Top the fruit with the creamy avocado dressing



Sweet potato fries
1 sweet potato, medium size
2 tsp cinnamon
vegetable oil cooking spray
Peel the potato.
Cut it into "fries" - around 1/4in thick and 4in long.
Put the strips in a bowl and spray very lightly with the vegetable oil.
Sprinkle on the cinnamon, then toss together.
Line a baking sheet with foil and place your sweet potato fries on it in a single layer.
Bake at 350 deg F, 180 deg C for around 45 mins.




Delicious Baked Apples

Choose a nice sweet apple (those listed in the applesauce recipe above are ideal).
Preheat the oven to 350 degrees F, 180 deg C.
Wash the apple and then remove the core (a melon baller is useful for this).
Sprinkle a little nutmeg or cinnamon over the apple, then fill the apple with raisins. You may like to add a drop of maple syrup, as the raisins may be quite tart.
Wrap the apple in aluminium foil and seal tightly.
Bake the apple for around 45 mins, until it feels nice and tender.
Remove from the oven and cool slightly, then remove the skin.
Mash or puree thoroughly and serve!




Blueberry pancakes
Ingredients:
•3/4 c. flour
•1 tbsp. sugar
•1 tsp. baking powder
•1/2 tsp. salt
•1 tbsp. margarine
•1 egg
•3/4 c. milk
•1/2 c. blueberries, washed and drained
•extra margarine for the pan
Directions:
1.In a large bowl, sift together the flour, sugar, baking powder, and salt. Set the bowl aside.
2.Melt the margarine in a small saucepan.
3.Crack the egg into a medium-size bowl, then add the milk and melted margarine.
4.Whisk until everything is well mixed.
5.Add the flour mixture to the egg mixture. Whisk again until both mixtures are blended together.
6.Put extra margarine in the saucepan and heat it on the stovetop on medium heat. It is hot enough when the margarine starts to bubble.
7.Use a measuring cup or a small ladle to spoon the batter into the pan. Put some blueberries on top of each pancake.
8.Cook your pancakes on medium heat until small bubbles appear on the top.
9.Use a spatula to see when your pancakes are light brown on the bottom. When they are, flip them over with the spatula.
10.Cook for another few minutes until the pancakes are light brown on the other side.
11.Remove your pancakes and put them on plates to enjoy!

*For blueberry pancakes, I have actually used regular pancake mix and mixed in fresh blueberries and DS loves them! I freeze them and take them out a couple hours before I am going to give them to him.

My DD is 15 months old and finger foods she's into right now:

peas & eggs (basically sautee frozen peas in a little butter, then once heated through, add beaten egg & a little parm cheese- scramble but let set up in bigger pieces- she loves this- an old-school Italian comfort food)

meatballs- i use the meatball mix (beef, pork & veal-, add garlic, a splash of milk, an egg, salt, pepper and breadcrumbs- instead of sauteeing them, I cook them in the sauce so they are more moist.

This is a great help to me though who is trying to figure out what to feed DS.

I tried the Applesauce Muffins and my DD loves them! I used a mini-muffin tin and they are the perfect size for her...we also made them using pureed carrot instead and they are also pretty good! Thanks for the recipe!

Mini Spinach or Zucchini Quiches

1 lb. Chopped spinach or 3 cups finely diced zucchini
1 large diced onion
1 cup Bisquick
1/3 cup oil
1 cup any grated cheese
4 eggs or egg substitute
1 tsp parsley flakes

Method
1. Combine above ingredients and mix well.
2. Pour into greased muffin pans
3. Bake at 350 deg. For 30-45 minutes or until well browned.
4. Chop into smaller pieces for little ones.

Makes about 12-15. They can be baked and then frozen.

Applesauce Pancakes

1 1/4 c milk, low-fat
2 large eggs
2 tbsp vegetable oil
2 c applesauce
3 cups all-purpose flour
2 tbsp baking powder
1 tsp salt
1/4 c sugar
1/4 tsp ground cinnamon

(or you can probably just add the cinnamon and apple sauce to bisquick Chat Icon)

1) In a mixing bowl, combine milk, eggs, oil and applesauce.

2) sift in flour, baking soda, salt sugar and cinnamon.

3) Portion batter with level 1/2 cup on to griddle. Cook as you would pancakes.

4) For additional flavor, add some fruit on the side.
