Easy yummy sauteed spinach

My DH is typically not a big spinach person - but even he loved this! I only used 1 bag of spinach, but next time I'd definitely use more since the spinach wilts down SO much!


Heat up some EVOO on medium... add a few cloves of chopped garlic (I'm a garlic lover so I used 4). Add 1 bag of baby spinach. Season with salt, pepper, and a pinch of red pepper flakes. Cover for 2 minutes or until spinach wilts. When spinach has wilted, add a splash of fresh lemon juice. And voila! Chat Icon

That is the ONLY way Rob will eat spinach! I use 2 bags and it is STILL only just enough to feed my family of 4.

I make this all the time.

you need a TRUCKLOAD of spinach if you use the baby spinach in a bag.

if you use the spinach that they have usually with the kale and other greens at the supermarket (it's not bagged and the stems are longer) you can get away with using less and it's usually cheaper.

but we have this at least once a week, sometimes more. it's so healthy and so good.

I will sometimes hit it off with some freshly grated parma cheese also. awesome.

We buy the huge bag of baby spinach from costco...we get 2-3 meals out of it
