Dry white wine

When making a recipe that calls for a dry white wine, what kind do you use?

Pinot Grigio is fine and PLEASE do not use cooking wine, it's full of sodium and will make your dish taste gross Chat Icon

definitely a pinot! I also agree with the pp who said not to use cooking wine! It's not even close to wine and is definitely very full of sodium. Cook with something that you would drink.

i use pinot grigio or savignon blanc... whatever i like to drink. I like dry white wines... I think I like cooking with the mondavi brand.

Savignon Blanc - or whatever I have open as long as it isn't something sweet like riesling. I usually have chardonnay or Savignon blanc open and those are fine. But chardonnay reduces a little differently, but I have never had a problem using it.

You can use chicken broth in place of the wine

sometimes I buy those little 4 pack wine bottles (single serving) and cook with those.

You could also use dry vermouth. I use that when I don't have any Pinot around and it's cheaper.

I like Vermouth and keep a bottle of Noilly Prat on hand for cooking. If I don't have any for some reason i will use whatever wine I have handy - I prefer a chardonnay or sauvignon blanc for cooking.

If I don't have wine I use chicken stock and a little lemon.
