my fam and i just went camping in the catskills and they had a lot of good hiking trails- we did a 7 mile hike one day! But it was freezing at night, so you wouldn't be able to camp now. We stayed at Mongaup.

Uh-oh! I'm going camping in the catskills in 2 weeks! 
We always go this time of year though.
For more local hiking, we go here:
Rockefeller State Park Preserve
You can get a trail map at the entrance, that lists the terrain & mileage for different trails. And if you go at dusk, you may see deer!
It's really big, and there are differnt types of trails, but it's not hard core climbing & steep elevations.
If you Google it, you will find references to it on running/hiking message boards, for more info.

Check this out.
Good listing of hiking trails in NY. Most are about an 1 to 2 hour drive from western Nassau.

A few yrs ago I went to Minnewaska State Park. It's beautiful there.
Minnewaska is great and New Paltz is know for its hiking and isn't a far trek to get to, good luck!
