Cranberry Sauce
Anyone have a good fresh cranberry sauce recipe? I'm a fan of the jellied sauces but I like making it every year too. I would love to see everyone's take on it

I am pefectly happy with the recipe on the back of the ocean spray fresh cranberries bag. So easy to make and only takes about 15 minutes. I do punch up the cranberry flavor by using half water/half cranberry juice.

Same. You can also sub in OJ for 1/2 of the water.
If they don't put the recipe on the back of the bag, a lot of people are going to be S.O.L....including me. That's the recipe I use.

I have made this every year for about 8 years now! So good, I usually use less orange marmalade and sugar since it does get very sweet.
Cranberry Walnut Relish 12 ounces fresh or frozen cranberries 3/4 cup white sugar 1 (12 ounce) jar orange marmalade 1 tablespoon lemon juice 3/4 cup chopped walnuts
Directions
Preheat oven to 350 degrees F (175 degrees C). Place cranberries in a shallow 1 1/2 quart baking dish. Sprinkle with sugar, cover with foil and bake for 35 minutes. Remove from oven and sprinkle with walnuts. Re-cover and bake for 10 minutes. Remove from oven and stir in marmalade and lemon juice. Mix well. Cool to room temperature. Cover tightly and refrigerate at least 3 hours before serving.

Here's the Ocean Spray recipe :
1 cup sugar 1 cup water 1 12-ounce package Ocean Spray® Fresh or Frozen Cranberries Directions: Combine sugar and water in a medium saucepan. Bring to boil; add cranberries, return to boil. Reduce heat and boil gently for 10 minutes, stirring occasionally. Cover and cool completely at room temperature. Refrigerate until serving time. Makes 2 1/4 cups

I watched the Voltaggio Brothers Thanksgiving show on the cooking channel last night. Omg, everything looked so good!!
Here is their cranberry-orange compote I think I am going to make that along with their biscuit stuffing.

anyone ever add Gran Marnier or brandy to theirs. Most of the recipes I've used had liquor in it...maybe that's where it went wrong

I make my own molded cranberry sauce. Recipe and mold from Willimas Sonoma.
Ingredients: 1 lb. fresh cranberries 1 cup plus 2 Tbs. sugar Zest of 2 oranges 2/3 cup fresh orange juice Pinch of salt 2/3 cup plus 2 Tbs. cold water 1 envelope unflavored gelatin Directions: Lightly coat the inside of a ceramic cranberry mold with nonstick cooking spray.
In a large saucepan over medium-high heat, combine the cranberries, sugar, orange zest, orange juice, salt and the 2/3 cup water. Bring to a boil, then reduce the heat to medium-low and simmer, stirring occasionally, until the sauce thickens and the cranberries have burst, about 15 minutes.
Meanwhile, pour the 2 Tbs. water into a small bowl and sprinkle with the gelatin. Let stand until the gelatin softens and swells, 5 to 10 minutes.
Spoon 1/2 cup of the juices from the cranberries into the gelatin and stir until the gelatin has dissolved. Pour the gelatin mixture into the cranberry mixture and stir to combine. Pour the cranberry mixture into the prepared mold and let cool to room temperature. Cover loosely with plastic wrap and refrigerate for at least 8 hours or up to overnight.
To unmold, dip the mold into a large bowl of warm water so the water reaches almost to the rim of the mold. Remove from the water and run a small paring knife or spatula around the inside of the mold to loosen it. Place a serving platter upside down on top of the mold, invert the platter and mold together and shake gently. Then lift off the mold. Serves 12 to 16.
