yesterday, i prepped the tater tot casserole.

so easy!!!

it's currently in my freezer. i'll move it to the fridge when i go to bed on christmas eve and then bake when i get up.

i love easy and pre-made. makes life so much easier!!

Christmas breakfast

I usually throw cinnamon rolls (from the refrigerated can LOL) into the oven while DD get's started on gifts. This year, we've decided to do a brunch with my parents instead of dinner.
So we're having:
Egg Muffins (basically mini omelets in a cupcake tray)
Bacon/turkey Bacon, sausages
Assorted croissants/danish
Breakfast potatoes in crockpot
french toast casserole
mini bagels with cream cheese, butter & lox
fruit platter
HUGE Charcuterie
Mozzarella & tomato
shrimp & crab cocktail

I give everyone who has young children and puts something big together a lot of credit.

DS is still young enough to rip us out of bed early in the morning and I don't function well when I have to wake up quickly.

I get a headache and I'm cranky and it's enough work to crack open the tube of cinnamon rolls.

But DH and DS are not breakfast people at all so it wouldn't be worth it even if I wasn't ornery lol.

I hear you. My DD used to get us up at like 6 am or earlier and I would be like- I at LEAST need my coffee before you can open anything. I am not a morning person by any means.
She didn't care one bit about breakfast either- she wouldn't eat all day if I didn't make her- she was too excited for toys and gifts.
I don't really eat breakfast until like 11 am or later if at all and DH never eats breakfast so for us, it's not a big deal. We're a very small family of 3 so big breakfasts never really worked for us. lol

Aaaaaaand...the LO's didn't wake up until....get this...8 freaking 30!!

I ended up making cheesy egg patties in the Dash Sous Vide maker I bought on Amazon and Avena for my family. It’s a Puerto Rican creamy style custard made with cornstarch.
