Chicken recipes?
We always have boneless skinless chicken breasts at home (we buy a lot on sale) and I am looking for new recipes for chicken. I am sick of the same old stir fry for dinner.
Any ideas? Healthy is a must (I need to drop this 15 pounds already!)

salsa chicken
sprinkle chicken with a little taco season (I use low sodium) on each side and place in baking dish place a tablespoon of salsa over each and top with low fat mexican mix cheese bake 375 for half hour (depending on thickness of chicken) I serve with low fat sour cream brown rice and usually make a veggie on the side.

baked chicken cutlets butter whole wheat seasoned bread crumbs parm cheese
I melt 3-4 tablespoons of butter in a dish and place some whole wheat seasoned bread crumbs in a dish and mix with some grated parm cheese.
dip the chicken in the melted butter then the bread crumb mixture, place in a baking dish that is sprayed with pam and bake 375 till done - I use thin chicken for this, so it takes 10 -15 minutes to cook.

I bet that would be great in the slow cooker... and then you could shred it and make tacos!!!! YUM! putting in on my list to try!

Grill and toss into a salad with lo-cal dressing. We do this for dinner when we're looking for something light.

And I like taking chicken breast (or salmon) and baking it with the following glaze. Sorry I don't have measurements. i do it to taste:
Dijion mustard (@ 2 tbsp) honey (@1 tbsp) lime juice (@ 1 tsp) brown sugar (@1 tbsp)
mix all together. Spread on the chicken and bake at 350 or 375 till done.
