Chicken Dish for a party?
I'm doing most of the cooking for DD's 1st birthday. We're having about 50 ppl.
I have my menu palnned, but I need at least 1 chicken dish I can prepare, but I really don't want to do chicken parm or any chicken I have to fry first. It will take too long and I really hate doing it.
Here's my menu other than the chicken:
- baked ziti - swedish meatballs -sausage & peppers - ribs -eggplant parm - tortellini salad -roasted potatoes -burnt brocolli & broc rape -roasted red peppers -salad -chicken fingers & fried for the kids - Italian hero
TIA!

francese!
I did this for a party recently, at the recommendation of this site and it worked out great.
I did saute the chicken first, but that I put it in a dish and covered with the wine/lemon sauce and baked for 30 minutes. It was so tender and delicious!

Re: Chicken Dish for a party?
roasted chicken parts. (legs, thighs, breasts cut up into 3 pieces)
olive oil, salt, pepper. garlic, and rosemary.
let sit to meld flavors.
roast at 350 until cooked through.
done!

maybe just marinate some thin cutlets in an itailan dressing - then bake.
Good w/ rice/pasta...can't be easier.
