Brunch receipes needed: Egg/veggie caserole and potato

Having a brunch next weekend and looking for recipes for an egg-casserole with veggies type dish and a yummy potato recipe (for breakfast) too possibly. Anyone have any good recipes? Thanks!

We’re already doing a French Toast dish and a fruit salad.

Ham and Tater Tot Breakfast


INGREDIENTS:
1 pound frozen tater tots
1/2 pound diced ham
1/2 cup chopped onion
1/2 cup green pepper diced
3/4 cup shredded cheddar
6 eggs
1/2 cup milk


PREPARATION:
In crockpot, layer ingredients in order: tater tots, ham, onions, green pepper and cheese. Repeat two more times, ending with a layer of cheese. In a bowl, beat eggs and milk. Salt and pepper to taste. Pour mixture over layers in crockpot. Cover and cook on LOW for 6-8 hours.

You can make a broccoli or asparagus quiche

I made Melissa D'Arabian's Fritatta with chorizio and potatoes and its' delish - recipe on foodnetwork.com

Both of these items can be served room temperature so easy when serving a crowd.

Here's my favorite breakfast "quiche." It is a little healthier than most because it is crustless. It is even good cold or room temp.

Crustless Spinach Quiche
Prep Time: 20 Minutes
Cook Time: 30 Minutes
Ready In: 50 Minutes
Yields: 6 servings

INGREDIENTS:
1 tablespoon vegetable oil
1 onion, chopped
1 tsp chopped garlic
1 (10 ounce) package frozen chopped
spinach, thawed and drained
6 eggs, beaten
3 cups shredded Muenster cheese (or another cheese)
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Shredded carrot (opt)
Dash of nutmeg

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
2. Heat oil in a large skillet over medium-high heat. Add onions and garlic and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
3. In a large bowl, combine eggs, cheese, salt, nutmeg and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
4. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.

We usually make monster omelettes and serve them in wedges.

My favorite omelette (and a favorite of my guests) is my everything omelette.

I roast 1 red bell pepper on the gas stove or grill. Once it's black I put it in a paper bag and leave it. Then peel it and chop it when it cools.

Into my large omelette pan or skillet I throw butter, a dash of oil, sprinkle of salt and a little pepper. Add chopped onion, some fresh chopped (not roasted) bell pepper, cook down for a minute and then add chopped tomato. Toss for another minute and add roasted pepper and small pieces of thick cut ham. Once everything is warmed and coated in the butter/oil, Add your eggs which you have already beaten with a little evap milk and a bit of Frank's red hot. Pour over the veggie / ham mix and let set. I continually seperate the outer edges from the wall of the skillet and tilt the pan to get the liquid egg into the area I made with the seperation. Once the omelette looks set enough - I add a good handful of grated cheese.. I like Gruyere but you can use whatever floats your boat. Then you can do a half fold (rather than a French fold because you will be cutting it into wedges), give it 30 seconds and remove it from the pan. Slice and serve right away. Deeeeelightful.

Another favorite:

Thinly slice about 7 small baby potatoes and about 1/3 of a Vidalia onion. Toss the potato and onion with a Tablespoon of Olive Oil and a sprinkle of sea salt. Then scatter on a cookie sheet and roast in an oven set to 400 degrees for about 15-20 minutes until they are soft and a little golden.

While the potatoes are roasting, pan fry some pancetta (you could use bacon if you prefer). I did about 5 thin rounds of pancetta (probably about 2-4 strips of bacon). Cook until just crispy - do not overcook or brown too much. Set bacon/pancetta on a plate to cool. You can put it in fridge to speed it up a bit.

Remove onions from oven and scrape into bowl and place in fridge to cool.

Beat about 8-10 eggs in a bowl (I used 4 whole eggs and 4 egg whites only). Add a little salt and fresh ground pepper to taste. Mix in a few snips of chopped chive and a couple of dashes of red hot or tabasco. Crumble the pancetta into the egg mix and then add the cooled potato onion mixture.

Add a quarter cup of olive oil to a cast iron pan - or whatever large pan you have. Heat until the oil is just about smoking and then pour the egg mix in. The eggs will immediately start to bubble and cook on the edges. Keep the heat on medium for a little under a minute than turn it to low and cover the pan and cook on low for 15 minutes until cooked through.

I love this! Sometime I make it for a side for a BBQ too!

to make this a little more healthy, add more zucchini and use low fat cheese, heart healthy Bisquick, 1/4 cup oil and 2 full eggs and plus 2 egg whites. and I add some fresh parsley.


ZUCCHINI CASSEROLE

3 c. grated zucchini
1 sm. onion, grated
1 c. Bisquick
1/2 c. oil
1/2 cup of cheddar cheese
1/4 tsp. salt
1/4 tsp. pepper
4 eggs

Combine all ingredients in large bowl. and beat until fluffy with whisk. Pour in casserole and bake at 350 degrees for approximately 40 minutes or until done in center.

I do a mexican one in a deep caserole dish,
layered as follows:

Scrambled eggs
chorizo (eliminate if going veggie)
salsa or enchalida sauce (I prefer the enchalida sauce)
black olives
then I pour a bisquick and milk layer
Bake until the bisquick is set then throw cheese on top and melt it.

Check out PAula Deen's hash brown quiche. Basically, you create a hash brown crust and then add eggs, cheese, and whatever else you want. I have done it with spinach, bacon, etc. Awesome
