Breakfast ideas..

Sunday is the NYC Marathon. It passes through Long Island City (where I live) and we would like to have a breakfast for us and a few neighbors.. there will be about 6-10 of us.

I got lots of eggs and bacon. I have no idea what to really make. Someone posted about a breakfast pizza type thing that looked good, I may try that. DH is going to make a pumpkin pie or two.

Any other suggestions?

Sausage and Egg Casserole

INGREDIENTS
1 pound bulk pork sausage
6 eggs
2 cups milk
1 teaspoon salt
1 teaspoon ground mustard
6 slices white bread, cut into 1/2-inch cubes
1 cup shredded Cheddar cheese


DIRECTIONS
In a skillet, brown and crumble sausage; drain and set aside. In a large bowl, beat eggs; add milk, salt and mustard. Stir in bread cubes, cheese and sausage. Pour into a greased 11-in. x 7-in. x 2-in. baking dish. Cover and refrigerate for 8 hours or overnight. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350 degrees F for 40 minutes or until a knife inserted near the center comes out clean.

baked french toast - www.foodnetwork.com has some good options. You make french toast w/ eggs, vanilla, let it soak in the bread overnight and bake in the morning

Definitely do a baked french toast, yum! Also I would do either a strata or casserole like posted above. And some fruit!

How about a quiche you can make it the night before and just pop it in microwave or oven to warm up...
this one is so easy and I use pre made pie crust from the store....

Spinach and Bacon Quiche

Ingredients
* 1 recipe Pastry for Single-Crust Pie
* 1/2 cup chopped onion (1 medium)
* 6 slices bacon, chopped
* 8 beaten eggs
* 1/2 cup dairy sour cream
* 1/2 cup half-and-half, light cream, or milk
* 1/4 teaspoon salt
* 1/8 teaspoon ground white pepper
* Dash ground nutmeg (optional)
* 3 cups lightly packed chopped fresh spinach
* 2/3 cup shredded mozzarella cheese (about 3 ounces)
* 1/2 cup shredded Swiss cheese (2 ounces)
* Cherry tomatoes, cut up (optional)

Directions

1. Prepare and roll out Pastry for Single-Crust Pie. Line a 9-inch pie plate with the pastry. Trim; crimp edges as desired. Line the unpricked pastry shell with a double thickness of foil. Bake in a 450 degree F oven for 8 minutes. Remove foil. Bake for 4 to 5 minutes more or until pastry is set and dry. Reduce oven temperature to 325 degrees F.

2. Meanwhile, in a large skillet cook onion and bacon until onion is tender and bacon is crisp. Drain on paper towels.

3. In a bowl stir together eggs, sour cream, half-and-half, salt, pepper, and, if desired, nutmeg. Stir in onion mixture, spinach, and cheeses.

4. Pour egg mixture into the hot, baked pastry shell. Bake in the 325 degree F overn for 45 to 50 minutes or until a knife inserted near the center comes out clean. If necessary, cover edge of crust with foil to prevent overbrowning. Let stand for 10 minutes before serving. If desired, garnish with cherry tomatoes.

5. Makes 6 to 8 servings

fritatta anything...i make it with asparagus, peppers and onions, potatoes and cheese, zucchinni....so easy to make...

i usually use veggies already cooked or I saute/steam them up quick and throw them in with scrambled eggs...cooke on the stove until he bottom is dry then stick under the broiler 3 minutes or so and it is done...
