Bean Recipes?
Does anyone have any suggestions for ways to cook beans for a toddler? DS will eat pork n beans and black bean soup, but he doesn't like the beans if there is a lot of stuff cooked with them (mainly vegetables). I really don't know what else to do with them to season them and make them a little tastier.

I make Pasta Fagiola for my DS all the time. Also you could make chili, rice and beans, escarole and beans, refried beans

I eat a lot of beans because I am a vegetarian so I will throw a few suggestions in.
What about a "mexican pizza"-- on a whole wheat tortilla with black beans and melted cheese and some mild salsa.
Also, Trader Joe's makes this great pre-packaged Lentil thing-- just has some mild salt & pepper and lemon juice-- so good all alone. I usually throw some in a salad (which I know a toddler won't eat), or mix with brown rice with a little parm cheese.
Then what about some hummus?

Thanks for all the great suggestions! I'm definitely trying them, especially the pizza--he likes regular pizza.
He will eat humus sometimes, other times no, but that's the same for any bean dishes. They are worth a try though, he won't touch any meat ever other than some fish and chicken nuggets.

you can make a white bean hummus too (or hide veggies in regular hummus), black bean tortilla wraps, garbanzo beans just for a snack, can you mix it into quinoa/cous cous/rice for him?

Don't know--I finally gave him some mashed beans one day when I saw the meat wasn't cutting it for him. The first time I gave them to him plain, just heated them up a little. He won't eat beans every time, but he does take them much more often than meat.
I think for him, the texture of meat is the unappealing part. The meats he will eat (chicken nuggets, fish sticks, tuna) are all pretty soft, and so are mashed beans, so he's probably happier with the texture.

Rachael Ray has some toasted chick pea recipes that might work. Check www.foodnetwork.com
I think its basically canned chick peas that were dried on a towel, dry toasted in a fry pan w/spices -

Nigella has this recipe as a replacement for mashed potatoes and DS LOVED it!
60ml olive oil, plus 2 teaspoons most of 1 clove garlic, crushed 1 sprig fresh rosemary, optional grated zest of 1 lemon 3 x 410g cans white beans salt to taste Serving Size : 2
METHOD 1. Put the 60ml of olive oil in a saucepan, and mix in the garlic. Add the whole rosemary sprig, if using, and the lemon zest and warm through. 2. Remove the rosemary, but do not throw away. 3. Drain the beans and rinse under a tap to get rid of the gloop and then add to the pan and warm through, stirring and squishing with a wide, flat spoon so that the beans go into a nobbly mush. Season to taste; some beans come saltier than others.

I think it best to get the recipe b/c I tried it w/ cumin and they were yucky. I also tried it w/ salt and pepper - better but I used too much salt. They tasted like something you'd get in McD's in India (or wherever they eat chick peas a lot)
