Re: fish recipes..i need help..

I just made filet of sole oreganata....it was yummy.

(this actually makes a lot of mixture! I used it on about 8 pieces of fish, if it was just for 2 of us I would cut the recipe in half...have also made it with shrimp)

2 1/2 cups bread crumbs (italian seasoned)
3/4 cup grated romano cheese
1/4 cup minced garlic
1/2 cup olive oil
2 eggs
1 tablespoon oregano
1/2 cup parsley

Mix all ingredients, should be "mealy" consistency but moist enough to hold together if you squeeze it in you hand.

-Preheat oven to 350. Lightly oil the bottom of baking dish with olive oil. Arrange fish in dish and spread stuffing mixture evenly over the top. Bake 15-20 minutes. Topping should be crisp and golden brown.
I served it with linguini with garlic and oil but in the past have served it with rice.

I like to take garlic and olive oil and saute until garlic is soft. Then put the flounder in a baking dish top with the garlic and oil, lemon juice and sliced tomato. Then top with feta cheese, sprinkle some bread crumbs on top and then bake in the oven on 350 for 15 - 20 minutes.

Re: fish recipes..i need help..

i make the easiest tilapia and it tastes so good and is so quick and easy. i never thought fish could be one of those quick dinners but this is one of the easiest dinners to make.

4 tilapia filets
1 tsp crushed garlic
1 lemon
salt and pepper to taste
olive oil

i usually start with about 2 circles of olive oil around the pan.

put in the garlic and allow to saute for a tiny bit, don't brown it.

put in the tilapia filets and squeeze the juice of half a lemon over them. sprinkle with salt and pepper and just let them cook over medium heat for a few minutes until the fish is mostly white looking.

flip over, sprinkle with a bit more salt and pepper on the other side, and just cook until fish is white throughout. i like to brown it too a little on the bottom but some might see that as being "overcooked"

i usually just make it with rice and a veg and my whole family LOVES it -- even the picky eaters.

Re: fish recipes..i need help..

I like to make my flounder two ways, breaded and baked.

To cut the fat and still have breaded/fried flounder, I use PAM. Dip the flounder pieces in egg beaters and then breadcrumbs (I use italian style and add garlic powder and romano cheese - I never measure this). I spray the pan with PAM add the pieces of fish and then spray the fish with PAM. I did pork chops this way last night.

The other way (and this can apply to any white fish really, I do it with scallops too) is baked. I spray a baking dish with PAM. I make a mixture of lemon juice, white wine, and butter. I do equal amounts of lemon juice and white wine, but half the amt of butter. I poor this over the fish and then I sprinkle it with breadcrumbs and romano cheese on top.

Easiest fish recipe ever and really tasty.

4 filets- sole or talapia
2 tablespoons of butter melted
1 teaspoon of fresh lemon juice(or more to taste)
1 tablespoon of dijon mustard
1 teaspoon of worcheshire sauce
1/4 cup breadcrumbs

Place fish in a lightly oiled glass baking pan. Mix together all ingredients but breadcrumbs and pour over each filet and then cover lightly with breadcrumbs. Place in a 425 oven for about 10 minutes or until fish is cooked through.
