Baby spinach
I have 2 big bags of baby spinach. How do you make yours? (don't want to use it for salad, would like to make a side dish with a steak dinner). Thanks!

In the past I have just tossed it in a pan roughly chopped added some fresh garlic chopped up and chicken stock---super simple and yummy---only takes a few minutes to cook
for DH I have done the same as above but added chopped bacon to it.
I have also, after doing the first mentioned recipe----stuffed it into a portabella mushroom and topped with sundried tomatoes and feta chesse

super super easy....boil water and throw the spiniach in. When it is all wilted it is done

I usually do like an above poster...sautee and bunch of garlic in olive oil until fragrant than add the spinach in batches.
you will probably be able to cook both bags b/c it shrinks significantly when it wilts.
I hit it off with salt, pepper, and freshly grated parm when it's done.
I don't use any liquid though...just the olive oil. if need be I'll add about 1 or 2 tablespoons of water....but generally I don't.

Made it tonight- both bags and you were so right! I could not believe how much it shrank down. We finished it and honestly could have eaten more!

My favorite thing lately to do with baby spinach is the following:
Cook a box of plain couscous. Transfer from pot to a large bowl. Place baby spinach on top and cover with saran wrap tightly. This wilts the spinach
Halve some cherry tomatoes and grab some feta cheese.
Combine everything in the bowl with some lemon juice. Makes a great side/salad.
