 How do you make your chicken cutlets? 
I mean like the pan fried ones.  I always just dipped in egg then breadcrumbs and put them in a pan w/ a little olive oil.  My friend uses butter instead of oil.  Just wondering how you like to cook them.

I do it with some latin flavor aka adobo and sazon.  I'll sometimes switch the breadcrumbs with cornflakes.

I buy thin sliced chicken breasts.  I season them with lemon juice, garlic powder and adobo (goya).  Then dip into egg then breadcrumbs (italian style).  I then pan fry them in canola oil.

I grind up corn flake crumbs in my Cuisinart and use those as bread crumbs. I dip them in the crumbs, then egg, then crumbs again BUT I bake them. I may drizzle a little bit of olive oil on the pan but not enough to consider it fried. They come out very crispy.

Also delicious, crush up Doritos or Sour cream and Onion chips in a ziplock. Substitute for your breadcrumbs! MMMMMmmm...yummy!

I am so  pro weight watchers...lol. I was on it a few years ago and got this recipe...
 
  Baked chicken cutlets
  Boneless, skinless cutlets loaf of wheat bread egg whites grating cheese
  crumble the whole loaf of bread in a large dish sprinkle some cheese if desired put egg whites in a seperate dish
  dip cutlets in egg whites and them cover in the bread crumbs
  when they are all breaded, put on a baking sheet and bake in the oven.
  Viola!

I usually do egg and breadcrumbs, but I tried a new recipe the other day that was really good!   Ground up pretzels in a food processor and I think I added thyme also.  Coat cutlets with pretel "powder", dip in egg, then back in pretzel mixture.  I fried in olive oil.  It also had a recipe for a cheddar mustard sauce that was really good too!

fry with canola or oilive oil 2-3 minutes perside on high heat (after dipping in bread crumbs)
  then i bake in the oven at 350 for 20 minutes

  and to change it up here and there I will add different things to the breadcrumbs, sometimes parmesan cheese, sometimes different spices, lemon zest, chopped basil

I dip them in a egg, milk and italian dressing mixture, then bread them with italian bread crumbs and fry em in the deep fryer. The italian dressing gives is a nice flavor.

I dip mine in cold water first, then egg, then flour, then egg again, then bread crumbs that have parmesan cheese, and paprika.
  I fry in Sunflower oil. They come out great!

  He dips them in egg, breading & fries them in oil.  If I do it, I bake them.

Dredge in flour, then egg then Progresson Italian seasoned breadcrumbs.  I usually use a mix of canola, olive oil and sometimes butter.
