I need bacon ideas

I want to make DH breakfast on Sunday and I want it to be a bacon-themed breakfast

I can do maple-glazed, that's easy, but that's more of a side - what should I go for the "main" dish?

If it helps, he prefers eggs over pancakes/waffles/french toast but I'm really open to all suggestions.

if he likes his eggs on his pancakes, maybe he will like cooked crispy crumbled bacon IN his pancakes (cook it then crumble it and mix it in the batter)

Brown Eyed Baker has a bacon brown sugar waffle recipe, I was planning to make that this weekend too!

Oh Breakfast Pizza is a super crowd pleaser in our home... ours isn't fancy.. but it's delicious!

We get pizza dough from the pizzeria - or a thin crust Boboli. If you do dough you need to bake it most of the way first.

Make some scrambled eggs.. but don't overcook.. they should be a little bit runny.

Make sausage and bacon.

Put the eggs on the pizza and then put pieces of bacon over the eggs and dot with sausage pieces. Sprinkle shredded cheese (I used mex blend or cheddar) over the top and bake until crust is crisp, eggs are cooked and cheese is melted. Sooo good.

Also breakfast burritos.

I cook the bacon and then I put chopped onion or shallot & diced tomato in a pan with some reserved bacon fat. Cook until they soften. Beat some eggs in a bowl and add to tomato mixture. Scramble as you normally would. Add a little Frank's Red Hot or Tabasco while scrambling.

Spoon egg mixture onto warmed tortillas and tuck in some slices of bacon, a little shredded cheddar and a bit of Taco sauce. Yummy.

I also use the reserved bacon fat for cooking my 'famous' hash browned potatoes in them.

Or you can do our Momz Diner theme. Every now and again I'll play short order cook for the family. I make up menus and hand them out - they order. I have taken to putting a 'price' on the menu - which is ALWAYS fun. For example:

2 eggs (scrambled, fried or soft boiled) with toast, 2 slices of bacon, hash browns and fresh fruit in season
Price: Wipe down the table after breakfast

Thick cut waffles, maple syrup, bacon & fresh fruit in season
Price: Dry all dishes for one meal today.

That way - they can pick what they want and you get help after breakfast!

I saw this on Diners Drives and Dives.. Bacon Waffles!!! Pour batter on waffle maker and put bacon slices on top and close the lid.. it looked amazing!!!!!!!!!!!!!

And, bacon covered in chocolate.. now that was a stretch but it was this chocolate stores most coveted item

I love breakfast burritos! I used to make them all of the time.

One version is scrambled eggs, cheese, chives, bacon wrapped in a burrito. DH goes nuts over them.
