You're going to need a TON of peppers (red and green) as well as onions. The peppers cook down to nothing. To fill a full try and a half, you'll probably need about 20 peppers and 4 onions. Sausages...no clue. I'd buy at least 4 large rings and cut them up.

We are having 25 people.. But I am also making a full tray of penne alla vodka, 5lbs of swedish meatballs in teh crock pot and hero (still deciding on how many ft of hero, maybe 6)?? What od you think. Oh and there are kids but I got chicken nuggest and french fries for them.. :)
Maybe you could make another 1/2 or full tray of the penne (I am Italian and pasta goes FAST here) and cut back a little on the balls. 5lbs of Swedish meatballs is a LOT since the balls are so small. You'd get like over 150 balls out of that! Maybe 3 lbs. As for the hero, do the 5ft because in my experience, when you have hot foods, the hero doesn't really go. Throw in a green salad too and you're good to go.
