Marias in Nesconset, really authentic (mexican/latin) Margaritas in Smithtown - SO GOOD! MY fave! Quetzlcoatl in Huntington. Super cheesy decor but really really really good food and the service is some of the best I have ever had. Really go above and beyond.

I love Viva La Vida in Oakdale but I THINK it's more Spanish than Mexican. Havne't been in a while though.
It's more Tex Mex but I LOVE Del Fuego

I haven't been yet, but my friends rave about Besito. They recently opened one up in West Islip.

Full disclosure, I honestly dont know the difference between Spanish and Mexican food so my suggestion(s) may be off base
Someone else mentioned Viva La Vida...SOOO good
If you aren't looking for a "fancy" place, Vallarta in Hauppauge is pretty good

Its on Vets - in the same shopping center as Five Guys, near the diner and Carvel. Almost where Vets meets 347. Side note: theres also a Halal place in the shopping center, i haven't been but i heard its AMAZING. Clay Oven is the name

Caracara in Farmingdale village (by Library Cafe) is soooooooo good. The only bad thing is the traffic/parking there.

Garlic Naan!!! & then I usually get a bombay bowl or one of the express items (most times chicken and rice platter)
