Re: what would you do... not sure how to handle this at all
I am a school psychologist, and I think your DD should return to the counseling center and speak with a guidance counselor, school social worker or the psychologist to voice her continued concerns. Frankly I'm surprised the counselor did not follow up with the girl after the first time your DD told them. Possibly they did but for confidentiality reasons, did not inform you or your DD. In any case, your 12 year old should not be carrying around this worry so I hope once she speaks to the counselors again, they assure her that they will address it.
If they don't, another idea is for you to call guidance out of concern for both the friend and your own child who is worried about this, or the assistant principal if needed.

I would call the guidance counselor or school psychologist myself and relay the information your daughter told you.
I went to high school with someone who had an eating disorder. She was skeleton thing, and only had one apple for the entire day. She ended up being admitted into a treatment program for a few weeks.
