How long can mayo free pasta salad stay at room temp?
Hi all - we are having people over today and I am making a pasta salad. No mayo or dairy - just pasta, roasted/grilled veg, and a vinaigrette. How long can this sit out of the fridge? I'd love to make it soonish, so that the dishes can be washed and away before people get here at 5, but don't have room in my fridge for another big bowl. Thanks!
(Please don't move, I need a quick answer!)

I would be nervous much more then an hour or two. Maybe you can store it in a couple of smaller containers that fit in the fridge better (and can fit better in the dishwasher and be stashed before company comes) and put in the serving bowl at the last minute.
I hold onto takeout containers for this, this way I don't feel bad just throwing them out if I have to.

I honestly don't think I have room for even splitting it up. Ugh... Maybe I'll just get everything else done and prep the veggies (bc I can split those into tiny packages if need be) and then make the pasta and combine it at 2;30 or so. Do you think that will be ok?

I wouldn't be overly worried about this. Now might be a little early, but I think leaving it our for a few hours is fine if there's no dairy or meat. Pasta and veggies don't spoil too quickly and the vinegar in the dressing will help inhibit bacteria growth.

I try to store as much as I can party day in gallon baggies So then I can just dump in a bowl and it's easy to store because you can fit it around weird shaped spaces in fridge

Why don't you put it in a bowl in another bowl with some ice to keep it cooled

I agree. I don't think this would spoil at all if you made it a couple of hours beforehand.
