I've only ever gone to NOLA for 4 -5 days max. I could totally enjoy a week there though. It depends on what you are looking for. When I go to NOLA all I want is to eat and drink my way through the city. So after a week of that I might get tired.

IMO, a week is way too long. A long weekend is perfect. Thursday-Sunday.

Stella closed.
Use yelp & you will find good places.
I really enjoyed JWFins & some of the classic places (Arnaud's).
I'd do 1 day French quarter walking, 1 day cemetery tour & night walking tour (cheesy fun) another day croc tour (fun!), plus or minus aquarium.
So, 4-5 days. You could do more/less depending on how you want to do it!
