First cheese
What was the first cheese you gave your LO? Did you mix it with anything? My baby cookbook says to start introducing yogurt and cheese but none of the recipes that follow actually contain cheese.

We did mozzarella since it's soft and American. How old is your LO? DD was eating it around 9-10 months.

We gave cheddar and provolone cut up into little pieces or shredded.

I gave shredded cheddar and diced mozzarella. Turns out DD has a whey allergy (she gets red spots on her face when she has uncooked cheese or milk). I also gave open face grilled cheese, cheese quesadillas, and mac and cheese pretty early and she does fine with all of those as long as I stick to cheddar since it's low in whey. I'm not sure if there's a recommendation about whether you should give cooked or uncooked first or if it matters.

I bought a block of organic mild cheddar and shredded it up at home.
ETA: Actually I may have done cottage cheese first!

We mixed ricotta with some pastina or other small macaroni. Them we did string cheese mozzarella and sliced cheeses (both cut up into small pieces).

I found organic ricotta and did the pastina thing, too. I also made them pastina and cheese like you would macaroni and cheese. I use Organic Valley American unprocessed singles when I make it. They have shreds, too but the girls aren't crazy about Colby.
