Why do we start testing so early? I am talking about cd8 and using the OPK's.

I don't use OPKs but I early because I'm fairly certain I ovulate early. Probably somewhere around CD10-13. My cycles are 26-27 days and I just happen to O on the earlier side, so we actually started BDing at like CD 6 this month and continued every other day-ish until about CD 17. Sperm can stay in the body for up to 5 days so even if you BD a couple days before you O it can help increase the chances.

Well, you don't have to start so early if your cycle runs later. After a few months, if you have a general pattern, go with that.
I usually don't get my smiley until day 14 or 15. So we don't start to BD any earlier than CD13.
It just depends...
