did I miss my window to separate my Hostas
I have a few that have gotten pretty big over the last few years and I wanted to separate them to fill in some other areas...do I still have time for that or should it have been done already?

I just did mine on Saturday. The weather seems to be pretty much the same this week, so this weekend shoud be fine.

No, you can still separate them. I even did some over the summer and they took fine.
