We took a 7-day cruise the day after DD turned 2. We had a blast, but it definitely was a lot of work.
Do you have a specific cruise in mind? I would check out www.cruisecritic.com.
I think you may run into issues with limited options for the little ones, as longer cruises tend to skew much older than standard 7-day cruises.

I have not, but it would require planning.
PP is right about longer cruises skewing older, so make sure you're on a line known for its good kids' activities. I'm hoping to do a Disney transatlantic at some point
