A dish that can sit in the car for a few hours?
I'm trying to figure out what to bring to my friend's birthday bbq on Sunday, but I'm going to the airshow beforehand. I don't live close enough to my friend's house and/or Jones Beach in order to run home to make something in between. I don't want to be scrambling at my Mom's house to make something in an hour or two. Can anyone recommend something that I can make (dessert, appetizer, whatever) that can sit in the (potentially really warm - hopefully sunny) car and still be good at 6pm (or later?). Thanks!

I would either pick something up on my way to the party or put some ice in a cooler and put whatever you make in there.

Can you put it in a cooler in your trunk or something? I wouldn't feel comfortable leaving anything in the car that long, especially if it is going to be so hot without having it in a cooler.

I would just stop on my way and pick something up.
I've brought ice cream cakes from Baskin Robbins to parties before and they've always been a hit and you don't have to cook!
You could also go to an Italian market and get some pre-made salads or hummus or something. They tend to do a good job there.

I would either stop somewhere on the way or do cookies (nothing with chocolate or anything that can melt), or a coffee cake or other type of cake that does not have frosting. Also ask the house if the need bread or rolls?

I make a bean salsa that keeps well in a cooler. You could also do a bruschetta.
