What type of oil to fry garlic in ??

I will be making and old family recipe and I'm not sure what oil to use.

Depends on what I'm fryingChat Icon But if I'm sauteing garlic, i'm doing it in olive oil...unless it's chicken in garlic sauce...then peanut or sesame oilChat Icon

Olive oil.

But usually I prefer to saute garlic in butter. It gives it nice flavor.

Olive oil has a low smoking point which is why its hard to fry in. Adding butter raises the smoking point so you can get the oil hotter without burning it.

Are you frying the garlic or sauteeing?

Keeping the oil at 350 degrees or below would be fine for olive oil.
