candied sweet potatoes.. need help from the pros
How do you get them really candied? I make these every year and they always turn out good, but I can never get that true candied coating. They always seem a bit too watery. Is there a trick or tip???

Are you making them mashed? If so, I can't help.
I cut my sweet potatoes in half and on each half I put a few slits with a knife and stick butter in each slit. Then I sprinkle with brown sugar. Bake for about 30 minutes and then take out and put some more brown sugar and some marshmallows. Bake for another 10 or so minutes.

I'm making them for the first time this year with my moms recipe, and she said the key ingredient is dark caro syrup

I use Bruce's Yams (yes I cheat-lol!!). I mash and mix them with butter, nutmeg, cinnamon, sugar, brown sugar, ginger and anything else I decide to put in-lol!! Then the marshmallows go on top
