I'm pretty much obsessed with this. I make it like every other week and have it for breakfast during the week. So delicious!
Pumpkin Pie Bread:
Ingredients
3 1/2 cups all-purpose flour 2 teaspoons baking soda 1 teaspoon baking powder 3 teaspoons pumpkin pie spice 1 teaspoon salt 3 cups white sugar 1 cup vegetable oil 4 eggs 1 (15 ounce) can pumpkin puree 1/2 cup water Directions
Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pans. Sift together the flour, baking soda, baking powder, salt, and pumpkin pie spice. Set aside. In a large bowl, beat together sugar, oil, eggs, and pumpkin. Stir in flour mixture alternately with water. Divide batter evenly between the prepared pans. Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean. For best flavor, store wrapped in plastic wrap at room temperature for a full day before serving.
So yummy. I usually use mix of white & brown sugar and sometimes add a bit more spices (cinnamon, nutmeg).

My absolute favorite is chocolate chip pumpkin cookies. My mom gave me her big long elaborate recipe years ago. Last year I discovered a super simple way to make them and they taste the same. We can eat a whole batch in a day! Love them sooo much
1 box of spice cake mix, 1 soup size can of pumpkin, chocolate chips. Mix spice cake and pumpkin together (just the spice cake mix...not the oil, eggs, etc.). Then add chocolate chips (however many you want really). Drop by tablespoon full on greased cookie sheets. Cook at 350 for about 13 to 15 minutes.
