I am not 100% sure....but you just made me think of when I purchased my first home. I was concerned about fumes, carcinogens, etc, and read about polyurethaning floors.
I read the Moisture cure was pretty harsh...as it is oil based (and smells more, takes longer to cure, etc). I am not 100% sure but this is what I am recalling. I ruled it out due to this.
Well anyway, we did finish our floors the more environmentally friendly way, with a water based poly vs oil based. I felt good about it. Also had a lower shine, more matte, dried quicker, etc.
Well let me tell you never again. The finish held up awfully with kids and pets. And it was hard to wash them, since they weren't very sealed like they would be with an oil based sealant.
So only you can decide. Finishing floors has no really good health conscious way to go about it, but you also have to think long term about how the floors will hold up as well, and what is easy to clean etc.
