Grilled chicken, fresh mozzarella, prosciutto and TJ's roasted red pepper spread
Peanut butter, banana, nutella
Grilled veg, pesto, fresh mozzarella
Sliced London Broil, red onion, blue cheese and a dab of mayo

mine is VERY simple but i loooove it.
first its all about the bread, i like a good ciabatta bread.
then i sauté minced garlic in butter and olive oil and rub it on both sides of the bread.
add thin slices of fresh mozzarella and press.
enjoy with a nice glass of cab!
ahh now i want panini's!
sometimes i'll add leftover sliced steak or leftover chicken cutlet, or roasted red peppers and eggplant!

I make my own version of Panera's old Chicken Bacon Dijon sandwich:
2-3 slices of cold cut cut chicken
3 slices of cooked bacon
1 slice of swiss cheese
Regular white bread
I mix together about 1-2 tbsp each of mayonnaise, dijon mustard, and honey. Then I mix in some Pampered Chef rosemary herb seasoning to make the spread
I spread both sides of the bread and I put on the chicken, the bacon, then the cheese.
It comes out perfect everytime!

I also love fresh mozz, juicy late summer tomatoes or roasted red pepper, fresh basil, a little red onion and a little prosciutto on garlicky ciabatta.
Or herb roasted chicken breast, peppery arugula, thinly sliced red onion and gruyere drizzled with a garlic balsamic vinaigrette. SO delicious.
OR grilled chicken breast, freshly made pesto, roasted red pepper in thin strips and a slice of provolone or gruyere.
Or marinated and grilled portobello mushroom.. sliced up - add spinach and some grated monterey jack... then top with a little garlic oil and a bit of balsamic.
