Sifting Flour

Should you always sift flour when baking, or just when the recipe calls for sifted flour?

Only when called for or the recipe will be off.

Also be careful , if the recipe calls for " 1 cup flour, sifted" you sift it after you measure. If it calls for "1 cup sifted flour" you sift before you measure, and if this is the case make sure you don't pack it into the measuring cup or all of your sifting will go away.
