What to serve with Empanadas
I want to make them for dinner this week but I want to make a complete meal. What do I serve with this?? Rice & Beans? but is that overkill on the carbs with the discos? Guac?

I serve mine with salsa, guacamole, sour cream. Sometimes I also serve spanish rice. What is inside of your empanadas? Sometimes I make them with beans and meat so that is why I don't add beans for a side. You can also make a nice fresh tossed salad or a tex-mex type salad with items like shredded cheese or corn.

I usually (well the only other time I made them ) put meat, onion, garlic, and spices. Maybe I'll do the tex-mex tossed salad with corn, black bean and some fresh avocado. Thanks for the idea

I always do spanish rice with pigeon peas and tomato on the side. And then - because I feel guilty about all the starch, fat and carbs - I make them eat a salad made with romaine, tortilla strips, black beans, a little shredded cheddar and a cilantro lime vinaigrette.

What on earth are pigeon peas? And where do I find those tortilla strips? I was thinking I wanted that but didn't know how

Pigeon peas are little tropical peas. You can get them in a can with the rest of the beans. I dump the can in a mesh strainer and rinse really well. You can do black beans if you prefer.
They sell tortilla strips in the supermarket.. but it's easy to make them. Take soft tortillas, brush with a teeny bit of oil, sprinkle with a little salt, cut into strips with a pizza cutter and bake in the oven. You can deep fry them if you prefer but I have to at least PRETEND to have some health consciousness sometimes so I bake. They get crisp and you toss them in your salad!

Thanks again J....totally making the tortilla strips on the salad. I think I'll stick with black beans this time, not feeling all that adventurous

I am Puerto Rican and when I make empanadas I always make them with rice and beans. IMO, its not over kill at all
