Which sides would you serve with the following meals?
Stuffed Zucchini
Fritatta (either asparagus & goat cheese or zucchini and feta)
Layered Enchilada bake

Not sure exactly what's in stuffed zucchini?
I would probably do a side salad. If there isn't rice/pasta in the stuffing, you can also do a side orzo or something like that. I boil the orzo in chicken broth and then season with parm cheese, pepper and mix in chopped spinach. easy side.
Fritatta - again, either a simple side salad - arugula would go nicely and/or home fried potatoes or roasted potatoes.
Enchalada bake - that one is tougher. Are there beans in your recipe? If not, you could do refried beans, mexican style rice, corn on the cob, and/or chips and guac

Stuffed Zucchini - Rocket salad with a balsamic vinaigrette and toppings depending on what it's stuffed with. Maybe a side of pasta to go along with it as well.
Fritatta (either asparagus & goat cheese or zucchini and feta) - Romaine, goat cheese and candied cranberries with a lemon dressing OR citrus salad with a honey lime dressing. Some hash browns or home fries would be nice for a starch if you like.
Layered Enchilada bake - what's in it? If there is already rice and meat in it then I would again just do a salad.. maybe a chopped salad with some corn in it for texture and repeating flavors.. and a cilantro lime dressing.
