I have a HUGE zucchini!
from the garden
Usually I would grill it with balsamic and mint but for some reason even thinking of that makes me grossed out.
What else can I do with it? I might just grill it with salt and pepper and serve it with chicken...

My parents have monster zucchinis from their garden this year... they are HUGE. I sliced it up, breaded it, fried it and made zucchini parm. It tasted just like eggplant parm!! You could also bread it and fry/bake it as a side.

I made a light tomato and zucchini sauce to go over pasta
I cut the zucchini in half then half again and then cut the pieces in to half moon shapes.
I add some chopped onion and garlic to a pot with olive oil. cook them for a bit.
I then add the zucchini, chopped greep pepper and mushrooms to the pot.
cook for a minute or so, then i add a bunch of cans of diced tomatos...depending on how much zucchini I have..
Add some spices like crushed pepper, basil, oregano....
Let it all cook together until zucchini is soft.
Serve over pasta with lots of grated cheese.
YUMMY!

I tried this recipe after I saw your post on a "pasta" thread in the dining in or out section and it was soooooo good. I've made it like a million times since then. I've tried it different ways too. Once I added sliced mushrooms another time asparagus tips. It's so good and so easy!

Me too! I have had huge zucchini's this summer from my garden. I've grilled it with a little EVOO, salt & pepper. I have made Zucchini Pie Zucchini Bread Tomato sauce with zucchini & onions fried zucchini Zucchini gratin

Okay, I have the BEST recipe for zucchini!!! SO YUM!!!
Grilled Zucchini Caprese Sandwiches
Ingredients
* 1 medium zucchini, trimmed and cut lengthwise into 6 slices * 4 teaspoons extra-virgin olive oil, divided * 1 garlic clove, minced * 1 1/2 teaspoons balsamic vinegar * 1/8 teaspoon kosher salt * 1/8 teaspoon black pepper * 4 (2-ounce) ciabatta rolls, split and toasted * 8 large fresh basil leaves * 1 medium tomato, thinly sliced * 6 ounces fresh mozzarella cheese, thinly sliced
Preparation
* 1. Heat a large grill pan over medium-high heat. Place zucchini in a shallow dish. Add 2 teaspoons oil and garlic; toss to coat. Arrange zucchini in grill pan; cook 2 minutes on each side or until grill marks appear. Cut each zucchini piece in half crosswise. Return zucchini to shallow dish. Drizzle with vinegar. Sprinkle with salt and black pepper. * 2. Brush bottom halves of rolls with the remaining 2 teaspoons oil. Top evenly with zucchini, basil, tomatoes, and mozzarella. * 3. Brush cut side of roll tops with remaining liquid from shallow dish, and place on sandwiches. Heat the sandwiches in pan until warm.
***I don't eat dairy so I eliminate the cheese, and I add grilled sweet onions & roasted red peppers instead of the tomatoes. Absolutely DELISH!!!
