Sicilian Riceball Casserole (only uses 1 sausage but its sooo good!)
Also I like making homemade pizza with onions and sausage on top.

sausage cornbread stuffing sausage stuffed mushrooms brown in and make a wine, garlic and oil sauce with mushroom and wilted spinach, red pepper flakes, over pasta!

I make sauce with sausage. I just cook it with some olive oil and garlic and a little onion. And then i throw in crushed or whole tomatoes. Add in seasoning and simmer for a bit. This si for italian sauage.
I also dont mind eating it on a hot dog bun with some ketchup and mustard. lol.

Sausage/Potato/Onion -
Cook the sausage in the oven. Slice potatoes or cut into fork-size pieces. I usually cook the sausage ahead of time and pour the drippings onto the potatoes. Add some salt and pepper to the potatoes and roast in oven. On the stove saute a quartered onion and some chopped garlic in butter until soft. Add brown gravy (I use the mix called Southeastern Mills, but you know, whatever works for you) Add some worcestershire sauce, Montreal Steak seasoning, whatever, mix in the cooked potatoes and the sliced sausage.

I love this Escareol, bean and Sausage soup
SOUP
Ingredients 1 tablespoon olive oil 2 pounds bulk Italian sausage 2 (32 ounce) cartons chicken broth 2 (15 ounce) cans cannellini beans, rinsed and drained 1 head escarole, chopped 1 (15 ounce) can tomato sauce Directions Heat the olive oil in a stockpot over medium heat. Cook the sausage in the oil until evenly browned, 5 to 10 minutes. Add the chicken broth, beans, escarole, and tomato sauce; simmer another 15 to 20 minutes.
Note: I also add diced carrots to mine
